Garlic Mayonnaise

Garlic Mayonnaise

5 tablespoons crushed garlic
3 egg yolks
salt and pepper
2 cups olive oil
juice of two lemons

Mix egg yolks, garlic, salt and pepper. Blend until smooth. Continue to blend add oil in a thin steady stream. As the sauce thickens, add the lemon juice and adjust seasoning. A little lukewarm water may be added if necessary to achieve the right consistency.
