Spinach Cups

An exotic breakfast treat

Ingredients

2 eggs

1½ cups milk

15ml melted butter/ margarine

250ml cake flour (more if required)

5ml baking powder

5ml fine jeera powder

5ml turmeric powder

250ml finely shredded spinach, washed and drained

1 green chilli, finely chopped

1 med onion, grated

1tub smooth cottage cheese for filling

grated cheese for filling, mixed with a little mayo to bind

Method

Beat eggs, milk and margarine until frothy. Sift in all dry ingredients and beat until smooth. Add spinach, chilli and onions to batter. Mix well. Allow to rest for 10-15mins. Batter should be fairly smooth and soft. Heat a non-stick frying pan and grease well. Pour a thin layer of batter evenly into pan. Fry to a delicate colour on both sides.

To serve: Place in shallow dishes and fill with cottage cheese and sliced baby tomatoes. Or, fill with grated cheese mix with a little mayonnaise

Or, fill as pancakes with cottage cheese and grated cheese filling. Roll up and serve with a fresh salad.
