An unusual vegetable slice with a cheesy flavour
Ingredients
1 bunch spinach, trimmed and washed
250g cream cheese, softened
125g feta cheese, crumbled
125g cheddar cheese or sweet milk cheese, grated
6 eggs, beaten
2 baby marrows, grated
1 carrot, grated
1 green pepper, chopped
5ml paprika
5ml black pepper
Salt to taste
100g sweetmilk cheese, grated for topping
Method
Preheat oven to 180°C. Spray and cook a loaf pyrex dish. Steam spinach and squeeze out as much liquid as possible. Place cream cheese, feta and cheddar and all vegetables and spices in a bowl and mix well. Fold in beaten eggs. Pour into pyrex dish and sprinkle with extra cheese for topping. Bake for ±30mins or until mixture is set and cheese is golden. Cut into thin slices and serve with a fresh green salad and lemon vegetable rice.
Variation: Bake in a square pyrex dish and slice. NB: Baking time will vary.
