Cheesy Biscuit

150g unsalted butter
1 cup grated cheddar cheese
1¼ cup plain flour
2 -3 tablespoons lemon pepper
¼ cup sunflower seed
¼ cup grated cheese, extra

PREHEAT oven to 180*C. Line two oven trays with baking paper.

Using electric beater, beat butter until light and creamy. Add cheddar cheese and beat until combined.
Using a metal spoon, fold in sifted flour and seasoning. Add sunflower seeds. Combine mixture with well-floured hands. Turn onto lightly floured surface and knead 2-3min or until smooth.
Roll out dough between two sheets of baking paper to 5mm thickness. Cut into squares, using a floured 4cm square biscuit cutter. Place on prepared trays, allowing room for spreading.
Sprinkle top of each biscuit with a little extra cheese. Bake for 10-15min or until golden brown. Allow to cool on trays.
