Vegetable Cheesecake

1bunch spinach, washed and cleaned

250g cream cheese, softened

125g feta cheese, crumbled

6 eggs, lightly beaten

2 baby marrows, grated

1 carrot, grated

1 green pepper, chopped

5ml paprika

5ml black pepper

salt to taste

100g sweet milk cheese grated for topping


Steam spinach and squeeze out all liquid as much as possible.
Place cream cheese, feta cheese, cheddar cheese and all vegetables and spices in a bowl and mix together well.
Beat eggs separately.
Fold egg into cheese mixture and pour into greased pyrex and sprinkle with cheese.
Bake for 25min. till set at 180ºC.
Cut into squares and serve with homemade bread and green salad.
