Chicken Tagliatelle

250g tagliatelle

1 medium onion, finely chopped

45ml oil

25ml crushed garlic

2 chillies, chopped

4 tomatoes, finely chopped

15ml tomato paste

500g chicken fillet, cooked and sliced in strips

250ml fresh cream

10ml paprika

salt and pepper to taste

Method

– Cook pasta till al dente
– Heat oil and onion. Sauté until soft
– Stir in garlic, chilles, tomatoes and tomato paste
– Allow to simmer for 20-30min
– Stir in chicken, add paprika and season to taste with salt and pepper
– Add sugar if necessary
– Heat pasta with cream in a separate pot and season with salt
– Place pasta in a serving bowl. Top with chicken sauce
– Garnish with parsley sprigs.
