A savoury bread with a herby taste
4x250ml cake flour
3x250ml bread flour – sift well together
10ml salt
10ml sugar
25ml melted butter
100ml chopped parsley
5ml dried thyme
1 small onion, finely chopped
10ml crushed garlic
±700ml warm water
2 pkts instant dried yeast
cheese for topping
poppy seeds for sprinkling
Method
Sift flour with salt and sugar, add butter, parsley, onion, herbs and garlic.
Pour liquids into a well in the flour, mix to make a workable dough.
Knead until smooth and elastic like for about 15 to 20min. Shape into a ball and place in an oiled bowl. Brush top of dough with oil.
Cover and leave to rise in a warm place until doubled.
Punch down, divide into two pieces. Divide each half into three, roll into long sausages and then plait, pinching to close at both ends.
Place loaves on oiled baking trays. Leave to rise until doubled.
Brush with milk and sprinkle with cheese and poppy seeds.
Bake at 200ºC for 10min then reduce heat to 180ºC and bake 20 – 30minutes longer or till done.
Makes 2 large braids
