A wonderful soup using up vegetables according to what you have in the kitchen.
1 tablespoon butter
2 tablespoon oil
3 large onion, finely chopped
4 leeks, finely chopped
2 sticks celery, diced
2 large carrots, diced
2 tomatoes, chopped
1 clove garlic, crushed
¼ cabbage, finely shredded
tin tomato soup mixed with 1 litre water
4 peppercorns
4 cloves
50g spaghetti
salt and pepper to taste
In a large saucepan, heat together the butter and oil. Add onion, garlic, leeks, celery, carrots and tomato. Fry gently for 10min, covered stirring occasionally to prevent vegetables for sticking.
Pour in the water mixed with tomato soup, add spices.
Simmer for about 1hour adding the cabbage and spaghetti. Cook for a further 30min.
Adjust seasoning if necessary.
