Spinach and cottage cheese pancakes

1½ cups milk (use a little more if required)

2 eggs

1cup flour (use a little more if required)

1cup spinach, finely shredded, washed and drained

1tsp baking powder

1tbsp melted margarine

1tsp fine jeera

1tsp turmeric

1 green chilli, chopped

1 medium onion, grated

salt to taste

smooth cottage cheese for topping

Method

Beat eggs, milk and margarine well together until frothy.
Sift all dry ingredients into milk mixture and beat well until smooth.
Add spinach, chilli and onions to batter. Mix well.
Rest for 10-15min. Batter should be fairly smooth and spreadable.
Heat non-stick frying pan and grease/spray well. Pour thin layer of batter evenly into pan. Fry to a delicate colour on both sides.
Spread with cottage cheese and serve.
