A seedy health bread
25ml honey
±600ml warm water
15ml dried yeast
4x250ml whole wheat flour
250ml white bread flour
100ml sunflower seeds
50ml sesame seeds
50ml poppy seeds
5ml salt
a little extra seeds mixed together for topping
Method
Heat oven to 200ºC and spray and cook a medium size loaf pan.
Mix honey with 250ml warm water and stir to dissolve.
Mix flours, salt and seeds, sprinkle yeast over and mix through with fingers.
Add liquid to flour mixture and mix into a soft pliable dough. Dough will be stiff and sticky. Place into oiled surface and knead till soft and pliable for about 15 – 20min.
Pat into prepared loaf tin. Brush with egg wash and sprinkle with seeds. Leave to rise till risen to the top of the tin.
Carefully place loaf tin in oven and bake.
Bake at 200ºC for 30min and then 180ºC for 30min. loosen sides and turn onto rack to cool.
Cover with damp cloth for softer bread.
Makes 1 flat topped seeded loaf.
