Tuna and cheese twisted loaf

A delectable filled spiral bread

750ml cake flour

7ml salt

10g instant dry yeast

50ml oil

350ml lukewarm water

Filling

200ml grated cheese

15ml chopped dhunia

10ml fish spice

10ml crushed garlic

1tin tuna, drained and flaked

5ml paprika

Topping

200ml cheese

paprika for sprinkling

Method

Sift flour and salt together. Add dry yeast and mix through with fingers.
Add oil and lukewarm water. Mix to a soft dough. Turn onto a lightly oiled surface and knead well, about 15min until smooth and elastic like.
Place dough in an oiled bowl, pat top of dough with oil, cover with plastic and allow to rest for 20min.
Knock down the dough and roll out into a rectangle of 30x35cm. Sprinkle tuna, cheese, garlic, dhunia, fish spice and paprika on dough. Roll up like a swiss roll, twisting in opposite direction and sealing off ends well.
Place on greased baking tray. Snip dough across top a couple of times at regular intervals with kitchen scissors. Allow to rise for 30-40min. Brush top with egg wash, sprinkle with cheese and paprika and bake at 180ºC for 40min.
Serve with green salad or pasta dish.
