3cups cooked long grain rice
2tbsp fish oil
2 eggs, lightly beaten
1pkt shrimps (optional)
500g beef strips
2med onions, sliced
15ml ginger and garlic, crushed
350g mixed vegetables
15ml soya sauce
salt to taste
2 green peppers, finely chopped
15 dried prunes (optional), for garnishing
50g margarine

Add 1tsp garlic, barbeque spice and dried chillies
Method
Heat a little oil in a pan, add half the beaten egg to form a thin omelette, cook until set.
Transfer omelette to board and roll tightly, cut into strips. Repeat with remaining egg and keep aside.
Heat some of the margarine and mix with oil and stir fry the beef strips until browned.
Heat remaining butter and add onion, ginger and garlic, mixed vegetables, peppers till tender. Add prawns and stir fry.
Mix all ingredients well and add all left over ingredients in a casserole dish.
Place in oven, sprinkle a little water and steam for ±15min. Place prunes on top of rice. Garnish with a tomato rose in center and serve with roast potatoes.
