Ginger Honey Lamb

45ml cooking oil

30ml garlic, crushed

30ml freshly grated ginger

1kg lamb chops, washed and well drained

2 onions, cut into quarters

1punnet mushrooms, sliced

250g snow peas or green beans, ends trimmed

50ml soy sauce

30ml paprika powder

5ml black pepper

salt to taste

30ml honey

30ml lemon juice

2 green chillies, finely chopped

Method

– Heat half the cooking oil in a large pan and stir fry the garlic and ginger for a few seconds. Add meat in batches and stir fry 10-12min till brown
– Remove from pan and set aside
– Heat remaining oil and cook onions, mushrooms, peas or beans for 2-3min
– Return meat to pot and stir fry with vegetables
– Combine soy sauce, paprika, pepper, salt, honey, lemon juice and chillies. Add to pot and heat through
– Take care not to over cook vegetables.
Serve with saffron rice and sliced tomatoes
