Pepper Fillet

Tender beef fillet on a roasted butternut


1- 1½kg whole beef fillet (cleaned and trimmed)

15ml salt

60ml mixed peppercorns, roughly pounded

30ml paprika

10ml black pepper

60ml butter

60ml cooking oil

Water as required

250ml fresh cream

1 punnet baby corn


Preheat oven to 200°C. Prepare a pyrex dish with Spray & Cook. Toss the butternut with all the ingredients. Spoon butternut evenly over dish and bake until tender for about 20-30mins.
