Creaole Casserole

2½cups rice

1kg chicken portion, clean and drained

10ml salt

pepper to taste (optional)

5ml chicken spice

5ml paprika

125ml oil

1 medium green pepper, cut into strips

1 medium onion, chop roughly

10ml crushed garlic

1 tin whole peeled tomatoes OR a tin of tomato and onion mix

2ml curry powder

2ml dried herbs/ thyme

Method

Preheat oven to 180*C

Cook rice in usual manner until done, rinse and allow to drain
Season chicken with salt, pepper , chicken spice and paprika
Heat oil in pot and brown chicken a few pieces at the time and until cooked
Place chicken in a shallow oven proof dish and sprinkle rice on top
In same pot in which chicken has been cooked, add garlic, onion, green pepper, tomatoes, curry powder and herbs. Cover with a lid and braise for 10min
Season to taste if necessary
Spoon vegetables over rice. Cover with foil
Bake for 40min until heated through and chicken is tender
Garnish with fresh chopped coriander
Serve with veggies or salad of choice
